Soft, chewy and perfectly sweet—these 3 ingredient oat cookies are a quick, healthy snack made with just oats, maple syrup, and nut butter.
1 cup rolled oats
1/2 cup creamy nut or seed butter (e.g., tahini, almond)
1/2 cup maple syrup
1. Preheat oven to 350°F and line a baking tray.
2. Mix nut/seed butter and maple syrup until smooth.
3. Add oats and mix until thick dough forms.
4. Scoop 12 equal-sized clumps onto tray and shape into cookies.
5. Bake for 15 minutes.
6. Cool completely before serving.
Use quick or rolled oats.
Store at room temperature 5 days or freeze up to 3 months.
Optional add-ins: chocolate chips, nuts, dried fruit, spices.
